It was 100 years ago when the grandfather of Dimitris Chatzopoulos, named George, decided to write down in a notebook his secret recipes at a small “kafenes” in the alleys of the village Giaoup, in Asia Minor. In 1922, when compelled to leave his home, with his craft as his sole property, he led his family to Greece. Over the years he managed to rebuild his life, his kafenes and adding on his experiences, he continued to soulfully master his passion for the distillation of ouzo. When modern technology combined with that notebook miracles were about to happen. Distillery Xatzopoulos created products that they are proud of and they serve worldwide.

Όλα ξεκίνησαν στο μικρό καφενέ, που βρισκόταν στα σοκάκια του χωριού Γιαούπ της Μικράς Ασίας όπου ο παππούς Γιώργος άρχισε να γράφει την ιστορία των αποσταγμάτων της οικογένειάς μας. Όταν το 1922 αναγκάστηκε να αφήσει πίσω τον τόπο του, με μοναδικό απομεινάρι την τέχνη του, οδήγησε την οικογένεια του στην άλλη πλευρά. Με το πέρασμα των χρόνων ξαναέχτισε τη ζωή του, τον καφενέ και προσθέτοντας τις εμπειρίες του συνέχισε να τελειοποιεί, με μεράκι, το πάθος του.

Tradition and experience merge with contemporary technology, in our distillery. Modern equipment facilitates the making of our premium quality product, always with regards to the environment. The traditional copper still pots are in the limelight, as they are the makers of the distillates. The chemical laboratory comprises of up- to- date electronic measurement devices for extensive quality controls, that take place during the production. Inside the stainless pots the “heart” (the best part of distillate) is left to be “tamed”. The modern bottling line is the final stage where our creation is sealed in a well designed glass bottle, ready for you to savor it.

Our skilled chemists, using specialized equipment throughout the production process, take samples, which are in turn subject to quality control at the chemical laboratory. The double distillation of the “heart” balances the flavor in a distinctly noticeable way. Prior to bottling, the filtering of the ouzo releases its subtle aroma that then is captured in its engaging bottle.
